Stoke Orchard and Staverton were used for motorbike racing and Little Rissington for karting. Chedworth has hosted a few autotests. Down Ampney is used for Rallying.
I came across this website years ago that tried to record every UK circuit and their varying layouts and there were a LOT of old-airfields in it even if some where used for just one race.
i dont know if this counts In the late 60s just after Martlesham had closed, The Santa Pod People held a drag racing event on the old runway. it attracted alarge crown but they never had another one. I remember it well
Jurby in the Isle of Man is used for testing bikes for the TT & GP. I took a Yamaha 750 down the runway when spannering for a Manx GP rider and have seen a race course on the place made up of traffic cones.
